Kirwin Hamman - Managing Director

Kirwin brings over 30 years of expertise in the food safety industry, with a proven track record of helping clients worldwide enhance their food safety standards.

His career began as a government food inspector in both Australia and the UK, before he transitioned into private consultancy, offering his services across Europe.  Throughout his career, Kirwin has collaborated with a diverse range of sectors, including hotels, food manufacturers, cruise liners, retail, restaurants, aged care facilities, hospitals and warehouses, helping them elevate their food safety practices.

As an internationally registered lead food safety auditor with Exemplar Global, Kirwin certifies food businesses globally. He is also registered auditor for third-party government regulatory audits across various food sectors within Australia.

In addition, Kirwin is a qualified trainer with the Chartered Institute of Environmental Health (CIEH), certified to deliver a wide range of accredited food safety training courses.

Kirwin is renowned for his expertise in developing and implementing comprehensive food safety programs. His work is highly regarded internationally, particularly for his commitment to driving continuous improvement and maintaining world-class food safety standards for EHC clients.

In 1996, Kirwin founded EHC, and over the past two decades has grown it into a leading global provider of food safety audits and training services.

Hayley Thomas - General Manager, Operations

As General Manager of EHC, Hayley brings over 20 years of leadership experience and a results-oriented approach to guiding our team and driving operational excellence.

Having held key roles, including General Manager for a Travel Management Company, Hayley has developed a strong reputation for cultivating positive team dynamics, fostering innovation, and ensuring outstanding customer satisfaction.

In her current role, Hayley is responsible for overseeing daily operations, aligning business objectives with company values, and working closely with the team to implement strategic initiatives. Her leadership is centered on creating a collaborative, productive work environment where employees are empowered to succeed. With a proven ability to strategise, manage, and streamline processes, Hayley is dedicated to driving sustainable growth and long-term success for the organisation.

Yolanda Daewoud - Office Manager

With over 25 years of experience in executive administration, Yolanda has excelled in Executive and Personal Assistant roles across a range of industries, including hotels, architecture, and wine.

Her diverse background brings a wealth of knowledge and expertise to our team, making her a valuable asset in supporting our operations. Yolanda assists with scheduling Food Safety Audits and Food Safety Training and  manages confirmations, contracts, and the coordination of auditor travel logistics.

Catherine de Castro - Training Co-ordinator

Catherine de Castro has worked for The Environmental Health Consultancy for over 7 years as Training Coordinator. Catherine's main responsibilities include the development of all HACCP certificates, development of clients' dashboards in relation to food safety audit results, together with all training certificates from courses that are facilitated by EHC staff. Catherine speaks fluent Tagalog and English and is a valuable member of the EHC team who thrives off her enthusiasm.

Shannon Hewett - EHCO App Co-ordinator

Over 20 years experience in providing administration support in the Health and travel Sectors. Shannon assists with the onboarding of clients for the EHC food safety app EHCO and provides travel support for our auditors.

Shannon prides herself on developing and maintaining strong positive, and productive working relationships with both staff and clients.

Adelene Aw - EHCO Data Administration & Support

 

With over 20 years of experience in IT business analysis and digital solution delivery at a major financial institution, Adelene brings a wealth of experience in understanding complex business needs and translating them into effective digital experiences.  Adelene assists with the onboarding of clients for the EHC food safety app EHCO, ensuring seamless setup and implementation, supporting a smooth start and long-term operation success.

Alice Hamman - Administration Support

Alice graduated in High School in 2022 and pursued her passion for dance, currently studying full-time with the goal of becoming a professional dancer.

She also works part-time at EHC, assisting with administration and updating our online platform EHCO.

Nuanprang Simma (Yokee) - Food Safety Auditor

 

Yokee, our Thai auditor based in Bangkok, brings over 20 years of expertise in food safety. With over seven years at EHC, she has conducted more than 1,000 HACCP food safety audits and provided food safety implementation training for luxury hotels throughout Southeast Asia. Prior to joining EHC, Yokee held the position of Complex Food Safety and Hygiene Manager.

Yisa Tong - Food Safety Auditor

Based in Guangzhou, China, Yisa brings over 10 years of expertise in food safety. With more than 4 years at EHC, Yisa has successfully conducted over 100 audits, ensuring the highest standards of compliance and quality. Prior to joining EHC, Yisa served as a Food Safety Manager and Quality Control Manager, where she honed in her skills in managing complex food safety operations and implementing rigorous quality assurance protocols

Jumil De La Torre - Food Safety Auditor

 

An experienced hospitality professional with over 12 years of expertise in hospitality, cookery, training, and food safety management. His career encompasses roles such as VET Trainer & Assessor, Training Manager, Kitchen Manager, and Head Chef.

Additionally, he conducts high-risk food safety audits and manages regulatory compliance across the industry. His work includes auditing in quick-service restaurants and hotels, and consulting on HACCP and ISO standards to drive continuous improvement

Ewald Jeske - Food Safety Auditor

 

Ewald has a demonstrated history of working in the international hospitality industry over 43 years. Skilled in catering, procurement, food safety management system, kitchen design, professional certified trainer for hospitality with a Master degree focused in food preparation/professional cooking from the hotel school Heidelberg Germany.

Ewald has been affiliated with EHC for over 25years and auditing internationally with EHC for five years.

Juliet Kauter - Food Safety Auditor

Juliet, our Australian auditor has worked for EHC for almost twenty years on a part-time capacity. Juliet travels frequently to Asia, the Pacific region, Europe, America and locally in Australia to undertake food safety audits and provide food safety training to a variety of hotel groups, food manufacturers and aged care facilities. Juliet enjoys working with our clients to assist and guide them to improve their food safety standards. Juliet began her career in a government food safety auditing role close to thirty years ago after completing her university degree.

Christina von Gemmingen - Food Safety Auditor

 

Christina has had a career in the pharmaceutical industry for 30 years working in several countries including Canada, in the Asia-Pacific region and in Europe.

Initially in her career she worked as an R&D scientist in analytical laboratories and then pivoted to global business development at an executive level negotiating and managing licensing contracts between researchers and/or international pharmaceutical companies.

Christina now brings her broad experience and skills to the food industry as well. She has experience in auditing and processes thereof, familiar with industrial pilot-scale and commercial scale manufacturing.

She holds a certificate in HACCP principles applicable for the food service industry. In her spare time Christina volunteers at a food centre in the city of Toronto preparing and serving meals to the at-need community.

Rissa Affiyanti - Food Safety Auditor

 

Rissa, our Indonesian Auditor based in Bali, brings over 14 years of experience in the Food safety management system. Dedicated professional committed to upholding the highest standards in food safety. Specializing in compliance with local and international regulations, she has successfully conducted numerous audits across various food production environments, ensuring rigorous hygiene practices and quality control measures are implemented effectively.

Having managed the GMP, HACCP, ISO 22000 and Halal certification, she demonstrates a comprehensive understanding of food safety protocols. The prioritizes not only compliance but also the development of a culture of safety and quality within organizations. Prior to joining EHC, Rissa served as a Quality and Hygiene Manager.
